Recipe: Chopped Brine Coleslaw / Salad (Freezable!)


I've always wanted a signature salad lol (though this might be closer to coleslaw). I think I might have found an option! 

Ingredients:

  • Polish Sauerkraut (1 jar) 
  • Romain Lettuce
  • Pickles (1 jar) 
  • Seasonal veggies to taste

Recipe: 

  1. Chop all the veggies
  2. Mix together
  3. Portion and freeze 
Benefits:

I thought about the function of the salad before the recipe. Here are some of the benefits to having a salad you can portion and freeze, which has pickled veggies.
  • Freezable so 1 - you can cook in a big batch and then freeze so it doesn't wilt in the fridge
  • Freezable so 2 - you can take a portion with you during the day and it will thaw by lunch 
  • Pickled so 1 - A salad that has pickled vegetables as well as fresh vegetables is quite healthy (esp for women!). 
  • Pickled so 2 - The vinegar keeps the frozen veggies from tasting waterlogged after thawing
